Ingredients
  

  • 200 g broccoli florets, chopped (about 7 ounces)
  • 6 eggs
  • 100 g grated cheddar cheese (about 1 cup)
  • 100 ml cream (or half-and-half) (about 1/2 cup)
  • 120 g sun-dried tomatoes, chopped (about 4 ounces)
  • 100 g crumbled feta cheese (for topping) (about 1/2 cup)

Instructions
 

  • Preheat your oven to 180°C (350°F).
  • Boil the broccoli florets for 1 minute until tender-crisp. Drain well and set aside.
  • In a large bowl, whisk together the eggs and cream until well combined. Stir in the grated cheddar cheese, chopped sun-dried tomatoes, and cooked broccoli. Season the mixture with salt and pepper, to taste.
  • Pour the egg and broccoli mixture into a greased quiche or pie dish. Crumble the feta cheese evenly over the top of the quiche.
  • Place the quiche in the preheated oven and bake for 35-40 minutes or until the quiche is set in the center and the top is golden brown.
