- For the Coleslaw: Cut the cabbage into thin strips with a sharp knife or in a food processor.
- Grate the carrots coarsely or cut them into sticks. Cut the onion in half and then into thin slices.
- Mix vegetables in a large bowl, add chopped parsley. Mix the mayonnaise, sour cream/yogurt and mustard together in a small bowl. Gently mix into the salad ingredients, season with salt and pepper.
- For the Tacos: Divide the minced meat with clean hands into 4 equal balls.
- Flatten one of the minced meat ball on the tortilla using hands or rolling pin. Season with salt and pepper.
- Fry the tacos, meat-side down first. Press down on both sides. Melt the cheese on top of the meat.
- Add Coleslaw on top of the cheese. Enjoy!
