Ingredients
- 7 medium potatoes
- 1 can peas (drained)
- 2 eggs (hard-boiled and chopped)
- 4 pickles, finely chopped
- 1 large fresh cucumber, diced
- 4 tbsp mayonnaise
- 200 g sour cream (3/4 to 1 cup)
- 200 g smoked chicken, shredded or chopped (1.5 to 2 cups)
Instructions
- Boil the potatoes in salted water until tender. Drain, let them cool, then peel and dice them. Hard-boil the eggs by placing them in a pot of boiling water for about 10 minutes. Cool under cold running water, peel, and chop.
- In a large mixing bowl, combine the diced potatoes, chopped hard-boiled eggs, shredded or chopped smoked chicken, drained peas, chopped pickles, and diced cucumber.
- In a small bowl, mix the mayonnaise and sour cream until smooth. Season with salt and pepper to taste.
- Pour the dressing over the salad ingredients in the large mixing bowl. Gently toss everything together until all the components are evenly coated with the dressing.
