  • 200 g ramen noodles (7 oz)
  • 250 g cooked salmon, about 2 medium fillets (9 oz )
  • 100 g mixed vegetables, e.g., carrots, bell peppers, broccoli, peas, beans (3.5 oz)
  • 2 eggs
  • 4 Seaweed sheets (nori)
  • Salt and pepper to taste

Instructions

  • Cook the salmon if it’s not already prepared. Season it with a pinch of salt and pepper, then bake or pan-fry until fully cooked. Set aside and let it cool slightly, then flake it into chunks.
  • Wash and chop the mixed vegetables into bite-sized pieces.
  • Boil the eggs: place them in a pot of water, bring to a boil, then simmer for 7-8 minutes for a medium-boiled egg. Cool them in ice water, peel, and slice in half.
  • In a large pot, bring water to a boil. Add the ramen noodles and cook according to the package instructions (usually 3-5 minutes). Drain and set aside.
  • In a separate pot, prepare your ramen broth according to your preference. You can use store-bought ramen broth or make your own using chicken, vegetable, or fish stock. Season with salt and pepper to taste.
  • Divide the cooked noodles into two bowls. Pour the hot broth over the noodles. Top each bowl with flaked salmon, mixed vegetables, and halved eggs. Garnish with pieces of seaweed and a sprinkle of salt and pepper. Serve immediately and enjoy your delicious ramen with salmon!
