Quinoa Feta Salad with Pistachios
This Quinoa Feta Salad with Pistachios is a balanced combination of quinoa, cucumber, red onion, parsley, feta cheese, chickpeas, and pistachios, tossed in a lemony dressing. It offers a satisfying crunch, creamy textures, and vibrant flavors, making it a wholesome and delicious dish.
Ingredients
- 200 g quinoa (7 oz)
- 1 large cucumber
- 1 red onion
- 1 handful chopped fresh parsley
- 100 g feta cheese (3.5 oz)
- 1 can chickpeas (400g/14 oz)
- 1 lemon
- olive oil
- salt and pepper to taste
Instructions
- Rinse the quinoa under cold water using a fine mesh sieve. In a medium saucepan, combine the quinoa with 400ml (1 2/3 cups) of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the quinoa is tender and the water is absorbed. Remove from heat and let it cool.
- Meanwhile, dice the cucumber and finely slice the red onion. Drain and rinse the chickpeas. In a large mixing bowl, combine the cooked quinoa, diced cucumber, sliced red onion, chopped parsley, drained chickpeas, and crumbled feta cheese.
- In a small bowl, squeeze the juice of one lemon. Whisk in olive oil, salt, and pepper to taste to create the dressing.
- Pour the dressing over the salad and toss gently to combine, ensuring all ingredients are evenly coated.
