Ingredients
- 6 slices ciabatta (or any other bread)
- 100 g smoked or salted salmon (3.5 oz)
- 2 tbsp butter
- 8-10 cherry tomatoes
- 2 large eggs
- ground black pepper, to taste
- optional: Garnish with fresh parsley
Instructions
- Bring a small pot of water to a boil. Carefully add the eggs and boil for 5 minutes. After 5 minutes, remove the eggs and place them in a bowl of ice water to cool. Once cooled, peel the eggs and set aside.
- While the eggs are cooling, lightly toast the ciabatta slices. You can do this in a toaster, on a grill, or in a pan with a bit of butter for extra flavor.
- Spread a thin layer of butter on the warm ciabatta slices and arrange them on to your board. Add salmon on top of the butter. Add the cherry tomatoes and the soft-boiled eggs to your board, halved or quartered as you prefer. Sprinkle freshly ground black pepper over the eggs and tomatoes for a touch of seasoning.
