Ingredients
  

  • 1 big zucchini (sliced)
  • 200 g grated cheese (cheddar, mozzarella, or your favorite mix)
  • 800 g crushed tomatoes, 2 cans
  • 1 tsp dried thyme
  • 4 cloves garlic (minced)
  • salt and pepper, to taste

Instructions
 

  • Preheat your oven to 180°C (350°F). Slice the zucchini and lay them on a baking dish.
  • Add minced garlic, season with thyme, salt and pepper.
  • Add crushed tomatoes and finally cheese on top. Bake in the preheated oven for 20-25 minutes.
  • Allow the casserole to cool for a few minutes before serving. Garnish with fresh thyme or parsley if desired.
