Ingredients
- 4 ripe peaches
- 100 g mozzarella cheese (3.5 ounces)
- 2 avocados
- bunch of fresh basil
- 8-9 cherry tomatoes
- 2 tbsp olive oil
- salt and pepper to taste
Instructions
- Wash the peaches thoroughly. Slice them into thin wedges, removing the pits. Cut the avocados in half, remove the pits, and scoop out the flesh. Slice the avocado into bite-sized pieces.
- Cut the mozzarella cheese into small cubes or tear it into bite-sized pieces. Wash the cherry tomatoes and slice them in half.
- Wash the basil leaves and pat them dry. Tear the basil leaves into smaller pieces if they are large. In a large salad bowl, combine the peach wedges, avocado slices, mozzarella pieces, and cherry tomato halves. Add the torn basil leaves.
- Drizzle the olive oil over the salad. Season with salt and pepper to taste. Gently toss all the ingredients together to ensure they are evenly coated with the dressing. Garnish with a few extra basil leaves if desired.
