  • 4 medium zucchinis
  • 50 g grated Parmesan cheese (1/2 cup)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • salt and pepper to taste

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray. Wash the zucchinis and cut them into quarters lengthwise. If the zucchinis are particularly large, you might want to cut them into smaller wedges for even cooking.
  • In a large mixing bowl, toss the zucchini wedges with olive oil until they are evenly coated. Add the garlic powder, smoked paprika, salt, and pepper, and toss again to distribute the spices evenly.
  • Sprinkle the grated Parmesan cheese over the zucchini wedges, ensuring each piece is well-coated. You can use your hands to press the cheese onto the zucchini if necessary.
