  • salt and pepper, to taste
  • 25 g grated Parmesan cheese (1/4 cup)

  • Preheat your oven to 400°F (200°C). Rinse the pattypan squashes and cut them into bite-sized pieces. Place the pieces in a large bowl. Drizzle the olive oil over the squash pieces. Add salt and pepper to taste. Toss well to ensure each piece is evenly coated with the oil and seasoning.
