Ingredients
- 1 large tortilla
- 3 eggs
- 200 g cottage cheese
- 50 g fresh spinach, roughly chopped
- 1 bell pepper, diced
- 50 g grated cheese (cheddar or your favorite)
- salt and pepper to taste
Instructions
- Preheat your oven to 180°C (350°F). In a medium bowl, beat the eggs until well combined. Add the cottage cheese, chopped spinach, and diced bell pepper to the eggs. Mix well. Season the mixture with salt and pepper to taste.
- Lay the tortilla flat on a baking dish. Spoon the egg and vegetable mixture onto the tortilla, spreading it out evenly. Sprinkle the grated cheese on top of the egg mixture on tortilla. Bake for 20-25 minutes, or until the eggs are set and the cheese is melted and slightly golden.
- Remove the tortilla from the oven and it cool for a few minutes. Slice into wedges and serve warm.
