Ingredients
- 400 g fresh blueberries (about 2 1/2 cups)
- 200 g feta cheese (about 7 oz)
- 50 g arugula (about 2 cups)
- 1 can of corn, drained (approximately 15 oz or 425g)
- 1 tbsp honey or maple syrup
- 3 tbsp fresh lime juice
- 2 tbsp olive oil
- 2 tbsp fresh basil, chopped
- 25 g green onion, chopped (1/4 cup)
Instructions
- Wash and drain the fresh blueberries. Crumble the feta cheese into small pieces. Wash and dry the arugula. Drain the canned corn. Chop the fresh basil. Slice the green onions thinly.
- In a small bowl, whisk together the honey, lime juice, olive oil, salt, and pepper until well combined.
- In a large salad bowl, combine the blueberries, feta cheese, arugula, corn, basil, and green onions. Pour the dressing over the salad and toss gently to combine, ensuring all ingredients are evenly coated.
