Ingredients
- 250 g cooked salmon, about 2 medium fillets (9 oz)
- 7-8 cherry tomatoes
- 1 fresh cucumber
- 100 g fresh salad mix (about 3.5 oz)
- 1 bell pepper
- 2 tbsp olive oil
- salt and pepper to taste
- 200 g Greek yogurt
- 1 small garlic clove, crushed
- 1/2 ½ cucumber, halved and deseeded
- handful of mint leaves, chopped
Instructions
- If the salmon is not already cooked, season it with a pinch of salt and pepper, then bake or pan-fry until fully cooked. Let it cool slightly, then flake into chunks.
- Wash the cherry tomatoes and halve them. Peel the cucumber and cut it into thin slices. Wash and chop the bell pepper into thin strips. Prepare the fresh salad mix by washing and draining it well.
- Make the Tzatziki Sauce: Grate the halved and deseeded cucumber using a box grater. Squeeze out any excess moisture using a clean kitchen towel or paper towels. In a bowl, combine the Greek yogurt, crushed garlic, grated cucumber, and chopped mint leaves. Mix well and season with salt and pepper to taste.
- In a large salad bowl, combine the fresh salad mix, halved cherry tomatoes, sliced cucumber, and chopped bell pepper. Drizzle with olive oil and toss to combine. Season with salt and pepper to taste.
