Ingredients
  

  • 5 large eggs
  • 60 g grated cheese, like parmesan or cheddar (about 1/2 cup)
  • 2-3 spring onions, chopped
  • salt and pepper to taste
  • smoked or fresh salmon, to serve
  • olive oil

Instructions
 

  • Crack the eggs into a mixing bowl and whisk until well combined. Add a pinch of salt and pepper to the eggs and whisk again. Grate the cheese and chop the spring onions.
  • Heat a non-stick frying pan over medium heat and lightly grease it with butter or oil. Pour the beaten eggs into the pan, spreading them evenly. Cook for about 2-3 minutes, or until the edges start to set but the center is still slightly runny.
  • Sprinkle the grated cheese evenly over one half of the omelette. Add the chopped spring onions on top of the cheese. Carefully fold the omelette in half, covering the cheese and spring onions. Cook for an additional 1-2 minutes, or until the cheese is melted and the omelette is fully set.
