Ingredients
  

  • 500 g ground beef (1.1 lb)
  • 1 egg
  • 1 medium onion, finely chopped
  • 3 3 carrots, diced
  • 1 leek, thinly sliced
  • 4-5 potatoes, peeled and diced
  • 2 litres water (8 cups)
  • 1-2 tbsp olive oil (for frying)
  • salt and pepper, to taste

Instructions
 

  • Heat a bit of olive oil in a large pot over medium heat. Add the diced carrots and sliced leeks to the pot. Sauté for a few minutes until slightly softened.
  • Pour in the water and bring it to a gentle simmer. Let the vegetables cook on low heat for about 10 minutes.
  • Add the diced potatoes to the pot. Continue to simmer the soup for another 10 minutes or until the potatoes are tender.
  • In a mixing bowl, combine the ground beef, chopped onion, egg, salt, and pepper. Mix until well combined.
  • Form and Fry the Meatballs: With wet hands, shape the meat mixture into small meatballs, using about a teaspoon of the mixture for each. Heat a frying pan over medium heat with a bit of olive oil. Fry the meatballs for 5-8 minutes or until browned and cooked through.
  • Carefully add the cooked meatballs to the simmering soup. Season the soup with additional salt and pepper, if needed. Let the soup simmer for a few more minutes to allow the flavors to meld together.
    Garnish with fresh parsley or dill.
