Ingredients
  

  • 200 g fusilli pasta (or spaghetti) (7 oz)
  • 100 g bacon, diced 3.5 oz
  • 1-2 garlic cloves, minced
  • 1-2 whole eggs
  • Sea salt and pepper to taste
  • 20-30 g grated Pecorino Romano or Parmesan cheese 0.7 – 1 oz

Instructions
 

  • Cook the Pasta: Bring a large pot of salted water to a boil. Add the fusilli pasta and cook according to package instructions until al dente. Reserve about 1 cup of pasta cooking water, then drain the pasta and set aside.
  • Prepare the Carbonara Sauce: In a skillet over medium heat, add the diced bacon. Cook until the bacon is crispy and browned, about 5-7 minutes. Add minced garlic to the skillet with the bacon and cook for an additional 1-2 minutes until fragrant. Remove from heat.
  • In a mixing bowl, crack the eggs and whisk lightly. Gradually add grated pecorino or Parmesan cheese to the eggs, mixing well to combine. Season the egg-cheese mixture with freshly ground black pepper.
  • Combine Pasta with Sauce: Return the drained pasta to the pot. Immediately pour the egg-cheese mixture over the hot pasta and quickly toss to combine. The heat from the pasta will cook the eggs gently, creating a creamy sauce. Add the crispy bacon and garlic from the skillet to the pasta. Toss everything together until well combined. If the pasta seems dry, add some of the reserved pasta cooking water a little at a time until desired creaminess is achieved.
