Ingredients
- 200 g fusilli pasta (or spaghetti) (7 oz)
- 100 g bacon, diced 3.5 oz
- 1-2 garlic cloves, minced
- 1-2 whole eggs
- Sea salt and pepper to taste
- 20-30 g grated Pecorino Romano or Parmesan cheese 0.7 – 1 oz
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Add the fusilli pasta and cook according to package instructions until al dente. Reserve about 1 cup of pasta cooking water, then drain the pasta and set aside.
- Prepare the Carbonara Sauce: In a skillet over medium heat, add the diced bacon. Cook until the bacon is crispy and browned, about 5-7 minutes. Add minced garlic to the skillet with the bacon and cook for an additional 1-2 minutes until fragrant. Remove from heat.
