Salmon and Caviar Blinis

Salmon and Caviar Blinis
These elegant appetizers are perfect for special occasions or gatherings. Adjust quantities according to your preference and the number of guests.
Ingredients
- 2 eggs
- 250 ml whole milk or kefir (1 cup)
- 1 tsp baking powder
- 1 tsp baking soda
- 2-3 tbsp sugar
- 0.5-1 tsp salt
- 200 g flour (0.44 lbs)
- 2 tbsp melted butter
- 2 tbsp olive oil for baking
- 8 tsp sour cream
- 80 g caviar (0.176 lbs)
- 80 g salmon (smoked or salted) (0.176 lbs)
Instructions
- Mix together 200g of flour, 1 teaspoon of baking powder, 1 teaspoon of soda, 2-3 tablespoons of sugar and 0.5-1 teaspoon of salt.
- Beat 2 eggs in a bowl and add 250 ml of kefir or whole milk and 2 tablespoons of melted butter.
- Mix all the ingredients together and let the dough rest for 10 minutes before baking.
- Bake the blinis in a hot pan greased with little olive oil.
- Once blinis are ready, lay them out on a serving platter. Top each blini with a teaspoon of sour cream. Add salmon or caviar. Finish with a sprig of fresh dill on top of each blini for garnish.
